Maine biscuit bakers and cooks have known for many years that the fluffiest, tastiest, BEST BISCUITS come from the recipe off the back of The Original Bakewell Cream® can. Bakewell Cream, a "NO FAIL" leavener created and made in Maine over 60 years ago by Byron H. Smith and a staple of New England baking ever since, is a mixture of sodium pyrophosphate and redried corn starch. Unlike most chemical leaveners on the market today, it includes no aluminum, no additives, no artificial color or chemical dyes, so Bakewell Cream baked goods just plain taste better.
Follow this easy to make biscuit recipe exactly, and within minutes you'll be buttering and enjoying a fluffy, light, high-rising biscuit -- the Made in Maine and New England traditional way...!

SAFETY HINT: CHECK INSIDE OVEN FOR STORED ITEMS...
THEN...
preheat your oven to 475°F.

4 cups All-Purpose Flour (Not sifted)
4 teaspoons Bakewell Cream®
2 teaspoons baking soda (level)
3 teaspoons sugar (optional)
1 teaspoon salt
1/2 cup vegetable shortening
1-1/2 to 2 cups cold milk (Varies according to the brand of flour)

Mix and sift the dry ingredients. Add the shortening, and mix with a pastry blender. Add milk all at once, and stir quickly with a fork to make a nice, soft dough.

Turn out onto a floured board and knead 5 or 6 times. Roll or pat to 1/2 to 3/4-inch thick. Cut with a biscuit cutter and place on ungreased cookie sheet. Makes twelve (12) Biscuits.

Bake biscuits in a preheated 475°F degree oven for 5 minutes. Turn off heat and leave in the oven for 5 to 10 minutes, until golden brown. These biscuits are extra high and light. Enjoy the moment...!!!

DELICIOUS AND TASTY BISCUIT TIPS and COOKING VARIATIONS
FOR THE REGULAR BAKEWELL CREAM® BISCUIT RECIPE:
  • DROP BISCUITS: Add a little extra milk to biscuit recipe (about 1/4 cup more). Drop by spoonful onto greased baking tin. Bake 10 to 15 minutes in a 450 F. Degree Oven.

  • CHEESE BISCUITS: Add about 3/4 cup shredded cheese to the dry ingredients in biscuit recipe. Use non-fat milk for liquid. Follow the rest of the recipe. Bake in 450 F. Degree Oven.

  • BACON BISCUITS: Add three (3) strips of cooked, crisp bacon, crumbled to biscuit recipe.

  • ONION BISCUITS: Add 1/3 cup fresh minced onion to your biscuit recipe.

  • SAGE BISCUITS: Add one (1) teaspoon of sage or poultry seasoning to your biscuit recipe. This is good with pork and gravy, chicken or other meat dinners.

  • ORANGE BISCUITS: Dip a cube of sugar into some orange juice and place it on top of the biscuit before baking.

  • CINNAMON-SUGAR BISCUITS: Dip biscuits in melted butter, sprinkle with cinnamon and sugar mixture. Bake as usual.

NEW ENGLAND SHORTCAKE RECIPE FOR STRAWBERY SHORTCAKE:

To make a slightly sweeter biscuit for shortcake, add one (1) tablespoon of sugar for every cup of flour or biscuit mix used. Bake as individual biscuits or spread in greased pan about 3/4 inch thick and bake in hot oven until lightly brown on top.

NEW ENGLAND STRAWBERY SHORTCAKE RECIPE:

Split warm Bakewell Cream Biscuits in half. Ladle sweetened sliced or crushed strawberries over one half of biscuits and cover with the other half. Top with more strawberries, whipped cream and a whole strawberry. Delicious and enjoy...!!!
