New England has long been recognized as the area and producer of the very highest quality maple syrups in the world. Learn the American Tradition of making Maple Syrup. (MAPLE FACT: It takes 40 gallons of maple sap to produce one gallon of pure maple syrup.) This natural, flavorful sweetener from Mother Nature is produced under strict product quality laws which prohibit the use of any additives or preservatives. Maple syrup and maple sugar are rich in potassium, calcium, and iron. Check out these awesome Nutritional facts about pure, all natural, maple syrup. And the best news is that maple syrup and maple sugar are both 100% FAT FREE...! Of the grades of maple syrup that are available, there is no one grade of which it can be said that it is better than another, it really is a matter of your taste...!

New England maple syrups are similar to the palette like good wines, in that they offer to you a variety of unique, all natural flavors, which have been defined by law, and are to be free of preservatives, thus 100% pure maple syrup...! You will find one of the following official table grades marked on each container of maple syrup. The following are the four grades of pure maple syrup:

  • Fancy - light clear amber color, delicate maple flavor. Its unique flavor makes it a favorite topping with many desserts and a true gourmet's delight.
  • Grade A Medium Amber - medium amber color, pleasant, but pronounced maple flavor. Very desirable for pancakes, waffles, french toast, and cereals. A great all-purpose syrup.
  • Grade A Dark Amber - Dark amber color, robust maple flavor. Slightly darker in color, but still with a pronounced maple flavor.
  • Grade B - the strongest and darkest grade syrup, used mainly for cooking. Slightly enhanced by a sweet caramel taste makes it an excellent flavoring in preparing many recipes.
New England Maple Cream or Maple butter as it is sometimes known, is made by boiling pure maple syrup to a higher sugar content, then cooling it and finally whipping it into a creamy consistency like honey. It's used on pancakes, waffles, and french toast.

New England Maple Candy is made by boiling maple syrup, to a higher temperature, whipping it and then pouring it into candy molds to harden. There is nothing else added to our pure New England maple candy.

Sugar Maple Leaf Hints and Tips For Cooking with New England Maple Syrup Maple Syrup - An American Tradition

Maple Syrup is an all natural, healthy alternative, and may be substituted for granulated sugar in most recipes. Be sure to use Pure New England maple syrup in all your cooking recipes. Cheaper imitation colored corn syrups or blended maple products may not contain all natural ingredients, and most certainly cannot match the excellent quality and flavor of New England pure maple syrup.

Maple Syrup Nutritional Information

Pure maple syrup: Pure maple syrup is a 100% natural food product, processed by the boiling and concentration of the pure maple sap. Maple sap is a sterile, clear liquid, which provides the trees with water and nutrients before the tree buds and leaves open in the springtime. In the boiling of the maple sap, concentrating it down to the syrup, and filtering processes, all the nutrients remain in the finished maple syrup. Please note, there are some numerical differences in the nutritive composition of maple syrup. This is due to the trees size and strength and environmental differences due to location among maple trees.

Sugars: Sugars are an important source of energy. The main sugar in pure Maple syrup is sucrose. The darker grades, especially Grade B syrup, contain small and variable amounts of fructose and glucose. In order of sweetness, sucrose is less sweet than fructose, and sweeter than glucose.

Minerals: Minerals have specific and nonspecific nutritional functions in the body's metabolism. In pure filtered maple syrup the main minerals present are: calcium, potassium, manganese, magnesium, phosphorus, and iron.

Vitamins: Vitamins are essential to maintain health; they cannot be manufactured by the body (except Vitamin D) so they must be acquired through food or taken separately. In pure maple syrup trace amounts of vitamins are present, mainly B2 (Riboflavin), B5 (Pantothenic Acid), B6 (Pyridoxine), PP (Niacin, B1), Biotin, and Folic Acid.

Amino Acids: Amino Acids are the building blocks of the proteins. In pure maple syrup many amino acids are present in trace amounts.

Total Solids: The total solid's in pure maple syrup amount to 66.5%, with the remaining 33.5% consisting of water. The table below represents the main elements within the total solids.
