Bell's Pumpkin and Ginger Cookies Recipe
INGREDIENTS
1 pkg of Bell's Pumpkin Pie Spicer
1/4 cup light brown sugar
1 cup pumpkin
1 egg
2 tbs grated fresh ginger root
2 tbs sour cream
1 tsp vanilla
1/2 cup softened unsalted butter
2 1/4 cup flour
1 tsp baking soda
1 tsp baking powder
1 cup chopped walnuts
1 cup chopped raisins
DIRECTIONS
Preheat oven to 350° F. READ the Kitchen SAFETY Hint below.
Combine Bell's Pie Spicer, brown sugar, pumpkin, egg, ginger, sour cream and vanilla in a food processor. Process a smooth puree. Add the butter into the mixture and process 10 more seconds. Mix the flour, baking powder and baking soda. Stir the dry ingredients into the liquid mixture, gradually. Then fold in the raisins and the chopped walnuts. Spoon dough onto a baking sheet and bake for 15 minutes.
Cool on baking sheet for three minutes then transfer to cooling rack to finish cooling.
