Spicy Rub Mexican Broiled Chicken And Garden Vegetable Casserole Recipe
This dish is quick and easy to prepare, and uses the abundance of summer vegetables from your organic garden.
Serves 4 to 6 healthy appetites.
Spicy Rub Mexican Broiled Chicken And Garden Vegetable Casserole Recipe Ingredients:
Spicy Chicken Rub Recipe Ingredients:
- 1 teaspoon ground cumin.
- 1 teaspoon chili powder.
- 1/2 teaspoon cinnamon.
- 2 teaspoons white wine vinegar
- 4 fresh garden garlic cloves or garlic granules.
- 3 Tablespoons vegetable oil.
Follow safe food handling procedures:
- 8 Fresh chicken thighs (about 2 pounds).
- 1 large fresh garden onion, sliced thin.
- 2 large freshly picked, garden tomatoes, chopped coarse.
- 4 garden fresh, zucchini squash (about 1-1/2 pounds), scrubbed, quartered lengthwise, and cut crosswise into 3/4-inch pieces.
- 1/4 cup fresh or canned chicken broth.
Follow safe food handling procedures:
- 1 to 2 tablespoons drained minced pickled jalapeño peppers (please wear rubber gloves).
- 1 freshly picked garden red bell pepper, cut into 1/2-inch pieces.
- 1 cup fresh garden sweet corn or use thawed frozen corn, if out of season.
- 1/4 teaspoon dried herb oregano - crumbled.
- 1/2 cup fresh Monterey Jack cheese - coarsely grated.
- Sea salt to taste.
- Freshly ground mixed colored peppercorns to taste.
Spicy Rub Mexican Broiled Chicken And Garden Vegetable Casserole Recipe Instructions:
In a small bowl, prepare a spicy rub on paste to coat the chicken thighs.
Whisk together the cumin, chili powder, cinnamon, white wine vinegar, 1 of the garlic cloves, minced and mashed to a paste with a pinch of sea salt, 1 tablespoon of the vegetable oil, adjust sea salt and ground pepper to taste, coating the chicken with the spice rub paste.
Grill the chicken thighs on your barbecue, over glowing coals. Turn the chicken thighs once, cook for 12 to 15 minutes on each side, or until the chicken thighs are cooked through.
While the chicken thighs are cooking, do the following step: In a heavy skillet over moderate heat, cook the sliced onion in the remaining 2 tablespoons vegetable oil, stirring occasionally, until they are lightly golden brown.
Add the remaining 3 cloves of garlic, minced, and the coarse chopped garden tomatoes, and cook this mixture over moderately low heat, stirring occasionally, for 5 minutes.
Add the garden zucchini squash, chicken broth, jalapeño peppers, garden red bell pepper, sweet corn, the herb oregano, salt and pepper to taste.
Then simmer, stirring occasionally, for 20 minutes, or until the zucchini squash and bell pepper are tender.
In a large flameproof shallow casserole dish, combine the zucchini mixture and the chicken thighs, sprinkle fresh grated Monterey Jack over the top. Broil the mixture under a preheated broiler about 6 inches from the heat for 1 minute, or until the cheese is nicely bubbling.
