Sheila's Select Gourmet Soup Mix Recipes

Broccoli and Swiss Cheese Quiche Recipe

Note: Follow Safe Food Handling Procedures

1 package Sheila's Select Gourmet Creamy Potato Soup Mix

Open package and remove:
1 Cup UNPREPARED Creamy Potato Soup Mix
1 Cup Warm Water
3 Fresh Eggs Slightly Beaten - check expiration date
1 Cup Cut Fresh Florets of Garden Broccoli
1 Cup Shredded Swiss Cheese
1 8 Inch Unbaked Pie Shell
1 Tablespoon COOKED Crumbled Bacon

In a bowl, whisk together 1 cup dry Creamy Potato Soup Mix, 3 eggs slightly beaten and 1 cup warm tap water. Let stand for 5 minutes.

Into the bottom of an unbaked pie shell, sprinkle in the following order:
1 cup shredded Swiss cheese,
1 tablespoon cooked crumbled bacon, and
1 cup uncooked small florets of broccoli.
Pour egg mixture all over.
Bake at 400 F. for 45 minutes. Let stand for 5 minutes before cutting.
Salt and pepper to taste.

This is a very delicious Broccoli and Swiss Cheese Quiche dish.
