  • UH HUH ... TM Chicken Recipe

    4 fresh boneless chicken breasts
    1 fresh orange, juice only
    4 tablespoons olive oil (2 tablespoons grilling)
    4 tablespoons UH HUH ... Spice Blend
    Salt and pepper to taste

    For grilling keep the chicken breasts whole and marinate with two tablespoons olive oil, UH HUH ... and orange juice.
    For stir-fry and saute, slice the chicken breasts into tenders, and marinate. In a hot pan with two tablespoons olive oil or on a hot grill cook the chicken five minutes on the first side and three minutes on the second side. Great for a tailgate party. Before serving add salt and pepper to taste. Serves four hungry guests. Recipe may be doubled.

  • UH HUH ... TM Spirited Omelette Recipe

    3 fresh eggs (check expiration date)
    1 whole scallion chopped fine
    1/4 red pepper finely chopped
    1/2 cup freshly grated cheddar cheese.
    1 tablespoon butter
    1 tablespoon UH HUH ... Spice Blend
    Salt and pepper to taste
    Garden chives for a nice garnish

    Beat the eggs with a fork until they are blended. Melt butter in an omelette pan, then add eggs. After one minute, turn the heat down and add the cheese, the UH HUH ... , scallions, red pepper, salt and pepper. When the cheese begins to melt, fold one half side on top of the other. Remove from pan. Cut in half and serve with fresh chives on top. Serves two for a tasty omelette treat.

  • UH HUH ... TM Unique Egg Salad Recipe

    6 hard boiled eggs
    2 fresh garden scallions, diced
    1 celery stalk, diced
    1 carrot, diced
    1 tablespoon UH HUH ... Spice Blend
    2 tablespoons mayonnaise
    Salt and pepper to taste

    Peel and chop the hard boiled eggs, put into a bowl with all the ingredients. Mix all together until completely blended.
    Serve on toast or with lettuce. Serves four for lunch.

    SERVING HINT: Substitute one can of tuna for hard boiled eggs for a delicious and tasty UH HUH ... tuna salad.

  • UH HUH ... TM Herb Butter Recipe

    1/4 pound (1 stick) of butter
    2 tablespoons UH HUH ... Spice Blend
    Salt and pepper to taste

    Melt the butter slowly, then add UH HUH ... and salt and pepper. Put aside until it has cooled and begins to harden. With your fingers, roll into a loaf shape. Thoroughly wrap the formed loaf in plastic wrap and put in the freezer. UH HUH ... herb butter is fantastic for corn on the cob, melted over asparagus, popcorn, baked potato, artichoke and heavenly lobster dipping. This tasty herb butter can be made several days in advance.

  • UH HUH ... TM Beef Steak Recipe

    1-1/2 lbs fresh sirloin steak
    3 tablespoons sesame oil
    2 tablespoons olive oil (frying option)
    4 tablespoons UH HUH ... Spice Blend
    Salt and pepper to taste

    Score both sides of the sirloin steak. Put sesame oil in a bowl followed by steak. Sprinkle the sirloin steak generously with UH HUH ... , let sit and marinate for 30 minutes. In a hot frying pan with two tablespoons of olive oil, or on a hot grill, place the marinated steak UH HUH ... side down and cook for five minutes, flip and cook for three minutes on the sesame side. Let the meat rest for 10 minutes, sprinkle with salt and pepper, then slice at an angle and serve. Great for a tailgate party. Serves four hungry guests.

  • UH HUH ... TM Seafood Recipe

    Flounder, Scallops, Tuna and Swordfish

    4 flounder fillets or the equivalent portions of the above fresh seafood
    1/2 cup white wine
    1 tablespoon UH HUH ... Spice Blend
    2 tablespoons Olive Oil
    1 fresh lemon, cut into slices
    Salt and pepper to taste

    Sprinkle the flounder on one side with UH HUH ... . In the pan, heat the olive oil, when the oil is hot put the fish UH HUH ... side down and cook for 1 minute. Flip the fish and add the wine. Cook for two minutes. Serve the fish UH HUH side up with lemon slices and a fresh garden salad. Serves four.

  • UH HUH ... TM Garden Vegetable Soup Recipe



    6 cups chicken stock
    1 onion, diced
    1 red pepper, diced
    2 garlic cloves, finely chopped
    3/4 pound spinach leaves, chopped
    3 carrots, sliced
    2 stalks celery, chopped
    1 medium sized potato, chopped
    1/2 pound mushrooms cut in half
    1 package frozen corn
    2 tablespoons UH HUH ... Spice Blend
    Salt and pepper to taste
    2 tablespoons olive oil

    Heat olive oil and add all the garden vegetables except the spinach and corn. Cook the vegetables for seven minutes, stirring often. Add the chicken stock. When stock begins to boil, turn the heat down to low. Add UH HUH ... , salt and pepper, and corn, cook for five minutes. Add the spinach. Cook until the spinach has wilted. To serve, use a slotted spoon and pile the vegetables in the center of a soup bowl, surround with delicious and tasty broth. Serves four.

    1/2 cup fresh sour cream (Check Expiration Date)
    1/3 cup yogurt
    2 tablespoons UH HUH ... Spice Blend

    Mix the ingredients thoroughly. Cover mixture and place in refrigerator for 1 hour.
    Use the delicious dip for vegetables, chips, or as a dressing.

  • "Potato Pancakes, Uh Huh Style

    Using the coarse shredder on a box grater, grate potatoes ( russets or yellow finns work well) and soak them in salted water for 20 minutes. Drain and dry them well. Add some finely sliced scallions (about three scallions per cup of potato), chopped parsley (about 1 tablespoon per two cups of potato), Uh Huh (about 1/2 teaspoons per cup of potato), 1 egg for about every three to four cups of potato, and salt and pepper. Mix well (you will need to stir mixture together from time to time). Heat lard and/or clarified butter in a skillet...you need about a 1/4 inch of fat.

  • When it is sizzling hot, but not smoking, start cooking the potatoes. Use a soup spoon to scoop up some of the mixture and drop it into the hot fat. Do not crowd the pancakes, and don't flatten them. When they are brown on one side, flip them, and brown on the other, and still don't flatten them. Keep the heat adjusted so that the fat doesn't smoke, and the potatoes don't brown too quickly. If you are frying a lot of cakes, change the fat in the pan periodically.

  • Don't try to keep the cakes hot in the oven, just serve them from the pan, topped with sour cream or a bit of fresh lemon juice, some coarse salt, garden parsley and/or fresh cilantro."
